My baker friend. ❤️I have been battling a very non-compliant dough since yesterday. Darn thing didn't rise as usual and even after 12 hrs in the fridge, it is not cooperating now that it's back on the counter. Kneading it more, but if it is not playing along it will go in the trash. After I switched to leaving the dough in the fridge overnight, the breads turned out really well. The dough still rises in there but in a limited way. The cold dough makes the scoring much easier. I am keeping the dough for another hours on the counter, reshaping it again, but then it will go in the trash if it doesn't show any signs of improvement. For the first time in months I bought a freshly baked bread at a grocery store, so I have something for breakfast. Already went 3 days without my breakfast bread! Waaaaah! Do you preheat your baking vessel or use it cold? I always preheat my cast iron skillet/lid thingy. Tried the cold version but messed it up somehow. Back to preheating. Of course last time I was clumsy again when I took the 465F baker out of the oven and burned my thumb. I am good at that...
