Ever wonder why rabbits have anything to do with Easter eggs? I wonder if it has anything to do with jackrabbits. The ones here steal quail eggs, carry them around and leave them in odd places. Once I found one in the pond and a few times under the van where the rabbit likes use the shade. What about the antler part of a Jackalope? If you ever see a jackrabbit, they are tall and slender, and sometimes run like a deer with a flashy tail. Brown with an orange side stripe outlined with black and a white belly. Very angular. In some parts of AZ they have, "antelope jack rabbits". Perhaps someone thought they saw antlers or horns, or maybe they did have antlers in the past. There is also a disease they can get making it look like they have horns.
