Kimchi is spicy, fermented cabbage. I've heard that it can be made in covered pits. So... Being in "deep kimchi" equates to one's great misfortune of stepping onto one of these pits.
Superhuman children living as refugees in an abandoned city during a harsh winter certainly qualifies as being in deep kimchi.
