Ingredients:

• 2 pie crusts (only using the bottom).
• ½ cup granulated sugar.
• 3 tbsp cornstarch.
• ¼ tsp salt.
• 1 tsp lemon zest.
• 2 tsp lemon juice.
• 4 cups blueberries (fresh or frozen).
• 1 tablespoon butter (diced).
• Egg wash (for brushing).
• 1 tbsp coarse sugar (for sprinkling).

Instructions:

• Preheat Oven: Set to 375°F (190°C) and prepare a pie pan with the bottom crust.
• Make Filling: In a bowl, mix sugar, cornstarch, salt, lemon zest, lemon juice, and blueberries.
• Assemble Pie: Pour the filling into the bottom crust, dot with diced butter.
• Bake: Brush the edges with egg wash, sprinkle with sugar, and bake for about 60 minutes until bubbling.
• Cool: Let it cool for at least 4 hours before serving.
