I've done some thinking on this very topic.
- Plants don't have a lot of use for green light. Given how cold it can get on Mars, incorporating magenta windows in a Martian greenhouse might convert some of the green in sunlight into useful heat.
- About the only reason plants need any blue light is for health reasons. During the day, the blue in sunlight would likely be welcome. At night, however, a mix of about 80% red light and 20% blue would keep the plants happy -- plus save on energy.
White light would help the farmers, but not their crop so much. It's the myriads of little details that could make colonizing Mars much easier.
Lastly, for numerous reasons, growing bamboo on Mars might be a superb idea.
