- 150g butter or margarine
- 150g flour
- 150g sugar
- 3 eggs
- Zest of 1 lemon
- 5g baking powder (½ packet)
Instructions:
- In a large bowl, whisk together the butter, sugar, lemon zest, and egg yolks until smooth and creamy.
- In a separate bowl, beat the egg whites until they form stiff peaks, then gently fold them into the butter mixture.
- Gradually add the flour and baking powder, folding carefully to keep the batter light and airy.
- Grease paper molds with butter and a dusting of flour, then pour the mixture into each mold, filling about ¾ of each.
- Bake at 180°C (350°F) for 15-18 minutes. Note: Avoid opening the oven during baking to ensure a fluffy texture.
