The gulyás soup gallery presents the history of the dish, explains its essential ingredients, and includes the recipes needed to prepare it. I originally wanted to write the recipe for a friend, since we often cook gulyás outdoors, over wood fire, in a cauldron — for us it’s an everyday, familiar meal. Along the way I realized that what feels simple and obvious here in Hungary is far from obvious to others. This gallery helps convey the true background, tradition, and preparation of gulyás.
