Tweaked your prompt a bit and tried some other models, that sometimes does the trick. For portraits, Stable Diffusion 1.5 isn't the best, I'd recommend Dreamshaper v8, WildlifeX Animals, AbsoluteReality v1.8.1, Realistic Vision V5.1 or RPG v5. Well, or if you want more coherence, try newer models. For the prompt, AI doesn't really understand linkers and all that, so I'd recommend being as precise as possible (instead of 'the scene shows a beautiful sunset, evoking a sense of serenity and peace', it works better something like 'beautiful serene sunset'), but that part isn't too important, each one has their wording style.
