Isn't it essentially kvass?  Or perhaps a cross between kvass and a sourdough.  The only potential problem I can think of is that your kitchen is probably full of lacto-fermentation microbes that might compete with the yeasts if you don't start with an active ferment.  Please let me know how it turns out.

No, not a kvass though I do want to try that later come spring. Not a sourdough either since I don't wish yeast for the fermentation but more like sauerkraut is made but using bread as the food for the lacto-bacteria. I don't want a sweet sauce but tangy and salty. Lacto-bacteria work in a saline environment, not just in mik like yogurt. They're the same bacteria that's in sauerkraut and fermented pickles.

I'm pretty sure this first try will be a flop but I'll keep adjusting things till I get it right ...or give up! 😂 For example, I don't know if I need to keep it consistently warm like I do yogurt, or if it'll work at room temperature unless I try.

I've made butter using whipping cream but I fermented it for a few days first so it would have a more European taste with some tang. Even though I used a spoon of yogurt as a starter, I didn't need to keep the cream warm. Room temperature was fine. I'm curious what the butter's like in South Africa? Here, it's mostly very plain.

A more detailed picture is starting to emerge -- death melons and kitchen cultures ☮️ I relate to both.  Sandor Katz (in Art of Fermentation) refers to a Polish fermented rye bread soup called *zurek*, and a fermented bread pudding here https://www.wildfermentation.com/semi-raw-fermented-bread-pudding/ .  If you're rushing in where even Katz fears to tread, you have my utmost respect.  Having said this, I can't see why it shouldn't work.  Commercial butter in SA is very bland.  A few dairy farmers have branched out into processing their own milk rather than being worked over by the multinational corporations, but (from what I've seen) it's mostly into some truly excellent cheeses than butter.  It's probably because we've been conditioned to expect butter to be bland.

# I like experimenting and since I make my own sauerkraut, fermented pickles, kimchee and yogurt, I'm trying to see if a bread slurry could be fermented as I make our own bread too. Just trying a very small amount and if it's horrible (which is likely), I can flush it down the toilet!
